The leg of the mutton comes from the hind quarter of the lamb. It is a tender, lean, cut, so it is good when cooked rare to medium-rare, although there are people who appreciate it cooked a bit further, especially the shank end. It is a great source of minerals such as phosphorus, zinc, selenium, iron, and B vitamins.
