Ingredients

For Chicken Marinade

  • 500 gm chicken thigh boneless pieces
  • 2 tbsp peri peri sauce
  • 1 tbsp ginger garlic paste
  • 1 tbsp lemon juice
  • 1 tbsp curd
  • 1 tsp paprika
  • 1 tsp black pepper
  • Salt as per taste
  • 1 tbsp oil

For Rice

  • 1 cup basmati rice
  • 2 cups water
  • Salt (as needed)
  • 1 tsp butter

For Bowl Assembly

  • 1 onion (sliced)
  • 1 capsicum (sliced)
  • Sweet corn (optional)
  • 2 tbsp mayonnaise
  • 1 tbsp chili sauce
  • Fresh coriander
  • Lemon wedges

Process

Step 1: Marinate the Chicken

Take a mixing bowl and add chicken pieces. Add peri peri sauce, curd, ginger garlic paste, lemon juice, and all spices. Mix everything properly so chicken is well coated. Cover and let it rest for at least 30 minutes (1 hour is better for deep flavor).

This step is very important because marination gives the real taste.


Step 2: Cook the Rice

Wash basmati rice properly and soak for 15 minutes. In a pan, add water, salt, and butter. Once water boils, add rice and cook until fluffy. Do not overcook rice otherwise it becomes sticky.
