Hyderabadi biryani is not only food, it is full celebration. Don’t worry, even if you never made biryani you can still do simple version at home.
Ingredients you need:
- 500g mutton (with bone, more taste) Buy Fresh Mutton in Ahmedabad
- 2 cups basmati rice (soak for 30 min)
- 2 onions sliced and fried (golden brown)
- ½ cup curd
- 1 tbsp ginger garlic paste
- Whole spices (clove, cinnamon, cardamom)
- 1 tbsp biryani masala
- 2 tbsp oil or ghee
Steps to make:
- Marinate mutton with curd, ginger garlic paste, biryani masala and salt. Keep for 2–3 hour.
- Boil water with salt and whole spices. Add rice and cook only 70%. Drain water.
- In a big handi or deep vessel, put one layer rice, then marinated mutton, then rice again. Add fried onion on top.
- Sprinkle little ghee, cover lid. If lid is not tight, seal with atta dough.
- Cook on very low flame for 40–45 min. This slow cooking makes mutton soft.
- Open lid carefully, aroma will be too good. Mix gently and serve with raita.
